Lemon Sponge Pie

1 cup sugar
3 Tbsp. flour
1 lemon  juiced (add a little more juice)
1 lemon rind 2 Tbsp. butter
1 cup milk
2 eggs, seperated

Mix flour, sugar, butter, juice, rind and milk. Beat well after each addition. Fold in stiffly beaten egg whites and pour into unbaked pie shell. Bake at 400 degree for 15 minutes and reduce heat to 375 degrees for about 30 minutes or until knife inserted in center comes out clean.
