Cheesecake

Crust:
1 3/4 cup graham cracker crumbs
1/2 tsp cinnamon
1/2 cup butter
optional: 1/4 cup finely chopped nuts
Combine, reserve 3 tbsp for top. Press into bottom and side of 9" spring pan

Filling:
3 eggs
2 8oz. packages cream cheese
1 cup suger
1/2 tsp. salt
2 tsp vanilla
1 tsp.almond extrac
3 cup sour cream (1/2 pt.)
2 teaspoons vanilla

.Beat till smooth.
.Blend in sour cream.
Sprinkle with unused crumbs
Pour mixture into prepared pan.
Bake at 375o F for at least 40 minutes or until cheesecake is set.
Refrigerate until chilled
