Boston Baked Beans
- 1 lb navy (pea) beans
- 6 whole cloves
- 1 medium onion
- 6 slices bacon cut into 1/2 inch pieces
- 1/2 cup unsulphured molasses
- 1/4 cup firm packed dark brown sugar
- 1 tablespoon dry mustard
- 1/2 teaspoon ground ginger
- 1/2 teaspoon salt
Remove and discard any stones from beans; rinse and drain. In 2 1/2 quart casserole, combine beans and 6 cup water.
In microwave, cook, covered, on high 16-22 minutes until boiling. Cook on high 2 minutes. Remove and let stand, covered, 1 hour. Cook, covered, at medium ,50% power, 30-40 minutes until beans are tender, but not soft.
Press cloves into onion; add with remaining ingredients to casserole. Cook, covered, on high 30-40 minutes, stirring 4 times, until beans are soft. If desired, remove and discard onion before serving.
