Slow Cooked Apple Butter

5-1/2 pounds apples, peeled, cored and finely chopped
4 cups sugar (adjust sugar to taste)
3 teaspoons ground cinnamon
1/4 teaspoon ground cloves
1/4 teaspoon salt

Place the prepared apples in the crock pot. Combine the sugar, cinnamon, cloves, and salt. Pour over the apples and mix well. Cover and cook on high for one hour. Reduce the heat to low; cover and cook for 9-11 hours or until thickened and browned, stirring as it cooks, especially as it thickens. Uncover and cook on low 1 hour longer. At this point you can cool slightly and chill to use immediately or you can place in freezer containers, leaving 1/2 inch headspace and freeze. Makes 4 pints.
