POTATO or MACARONI SALAD

6 cups diced potatoes or 16 oz. box macaroni
1/2 small onion chopped fine
2 or 3 stalks of celery, diced
6 hard-boiled eggs

Peel and dice potatoes, place in pot, cover with water and add salt. Boil until soft, about 10 minutes. Pour into colander to drain. Rinse with cold water. Cool completely.

Add chopped eggs, celery, and onions. Add enough of the Creamy Salad Dressing for a creamy texture.

For macaroni salad, cook macaroni according to directions on box. Drain, rise with cold water, cool, and add ingredients as given. Works best if cooked a day ahead, then add rest of ingredients to cold potatoes or macaroni.
