Russian Kulich


Almonds, candied fruits, and citrus peel are some of the essential ingredients for this Easter bread, which is similar to a German Christmas favorite, stollen. To transform this recipe into a stollen-like bread, add 1/2 teaspoon ground cardamom with the flour and use the Glaze recipe instead of the Almond Icing.

1-POUND LOAF
1/3 cup milk
1/4 cup water
1 teaspoon Pure Vanilla Extract
1 tablespoon butter or margarine, cut up
1 large egg
3/4 teaspoon salt
2 cups bread flour
1/4 cup chopped candied fruits and peels, drained of syrup
1/4 cup coarsely chopped almonds, toasted
1 tablespoon sugar
1 teaspoon finely shredded orange peel
1 teaspoon finely shredded lemon peel
1 1/2 teaspoons FLEISCHMANN'S Bread Machine Yeast
Almond Icing

Add all ingredients except icing to bread machine pan in the order suggested by manufacturer, adding fruits and peels and almonds with flour. Drizzle cooled bread with Almond Icing.

Almond Icing :
Stir together 1/2 cup sifted powdered sugar, 1/4 teaspoon Almond Extract, and enough milk (2 to 3 teaspoons) to make icing of drizzling consistency.

Glaze for stollen-like variation : Combine 1/2 cup sifted powdered sugar, 1/4 teaspoon vanilla, and enough milk (2 to 3 teaspoons) to make glaze of drizzling consistency.

Recommended cycle: Basic/white bread cycle; light or medium/normal color setting.
