1 1/2 cups all purpose flour
1/4 cup sugar
1 1/2 teaspoons baking powder
1/4 teaspoon salt
2 egg whites
2/3 cup orange juice
2 tablespoons cooking oil
1 teaspoon vanilla
1 cup fresh or frozen blueberries
nonstick spray coating
In a medium mixing bowl combine flour, sugar, baking powder, and salt. In a small mixing bowl beat egg whites, orange juice, oil, and vanilla. Add to dry ingredients, stirring just till moistened. Fold in blueberries.
Spray 1 3/4 inch muffin cups* with nonstick spray coating. Fill muffin cups half full.
Bake in a 400 oven about 17 minutes or till golden. Cool slightly before serving. Makes 36 muffins.
*Note: If desired, bake the muffin batter in 2 1/2 inch muffin cups about 20 minutes or till golden. Makes 12 muffins.
