Velvet Crumb Cake
1 1/2 cups Bisquick baking mix
1/2 cup sugar
1/2 cup milk or cold water
2 tablespoons shortening
1 teaspoon vanilla
broiled topping (below)
Heat oven to 350 degrees. Grease and flour square pan, 8 x 8 x 2-inchs or round pan, 9 x 1 1/2
inches. Beat all ingredients except Broiled Topping in large bowl on low spppd, scraping bowl occasionally, 4 minutes. Pour into pan. Bake until wooden pick inserted in center comes out clean, 30-35 minutes.
Cool slightly; spread topping over cake.
Set oven control to broil and or 550 degrees. Broil cake with top about 3 inches from heat until topping golden brown, about 3 minutes.
Mix 1/2 cup flaked coconut, 1/3 cup packed brown sugar, 1/4 cup chopped nuts, 3 tablespoons margarine or butter, softened and 2 tablespoons milk.
