World War 1 Cake


2 cups water
2 cups sugar
1 cup shortening
1 cup raisins
2 teaspoons ground cinnamon
2 teaspoons instant coffee
1 teaspoon ground cloves
1/2 teaspoon ground nutmeg
1/4 teaspoon salt
4 cups sifted flour
2 teaspoons baking soda
1 teaspoon baking powder
1 cup chopped walnuts candied cherries (optional)
Walnut halves (optional)

Heat oven to 350 degrees. Grease a 9X13 inch baking pan. Bring water, sugar, shortening, raisins, cinnamon, coffee, cloves, nutmeg and salt to a boil in a medium saucepan. Reduce heat to low. Simmer 5 min. Cool. Mix flour, baking soda and baking powder in a large bowl. Beat in water mixture with electric mixer on low speed. Stir in chopped walnuts. Pour into prepared pan. Arrange cherries and walnut halves on top. Bake 30 to 35 min., or until toothpick inserted in center comes out clean. Cool completely in pan on wire rack.
