Buttery Sour Cream Snack Cake
- 1 cup sugar
- 3/4 cup Butter, softened
- 1 cup Sour Cream
- 3 eggs
- 2 tablespoons vanilla
- 2 cups all purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
Heat oven to 350. In large mixer bowl combine sugar and butter. Beat at
medium speed until creamy (1 minute). Add sou cream, eggs, and vanilla;
continue beating until well mixed (1 to 2 minutes).
Reduce speed to low; add all remaining cake ingredients. Beat at low speed,
scraping bowl often with spatula, until smooth (1 to 2 minutes).
Spoon batter into greased and floured 12 cup Bundt or 10 inch tube pan. (If
using no stick cooking spray do not flour pan.) Bake for 50 to 60 minutes or
until toothpick inserted in center comes out clean. Cool 10 minutes; invert
onto serving plate. Cool completely.
1 1/2 cup powdered sugar
1 tablespoon Butter, softened
1 to 2 tablespoons milk
In small bowl stir together powdered sugar and butter. With wire whisk beat
in enough milk to make deisred glaze consistency. Drizzle over cooled cake.
