Sweet Potato-Pineapple Casserole


6 boiled & mashed sweet potatoes 1/2 cup brown sugar
1 can crushed pineapple 1/4 cup oleo
1/2 cup flaked coconut 1 cup chopped pecans
  1. Boil potatoes with skins on
  2. Peel & mash potatoes
  3. Combine pineapple, oleo, & brown sugar
  4. Cook over medium heat , stirring constantly until mixture boils for 1 minute
  5. Reserve enough of the mixture to cover top of casserole
  6. Combine the remainder of the mixture with the mashed sweet potatoes
  7. Sprinkle coconut & pecans on top of casserole
  8. Cover & bake at 325 F for 35 to 40 minutes
