Light and Cheesy Broccoli Casserole


10 ounces frozen broccoli, chopped, thawed
1 cup sour cream
1 cup creamed cottage cheese
1/2 cup Bisquick baking mix
1/4 cup butter, melted
2 eggs
1 tomato, peeled and thinly sliced
1/4 cup Parmesan cheese, grated

Preheat oven to 350 degrees F. Spray a 8 x 8-inch baking pan with nonstick cooking spray. Spread thawed broccoli in dish. Beat sour cream, cottage cheese, Bisquick, butter and eggs with hand beater 1 minute. Pour over broccoli. Arrange tomato slices over top; sprinkle with Parmesan cheese. Bake until golden brown about 30 minutes. Let cool 5 minutes before cutting and serving. Serves 6 to 8.
