3/4 cup margarine, at room temperature
1/2 cup granulated sugar
1/3 cup firmly packed light brown sugar
2 cups all-purpose flour
1/4 teaspoon salt
1/4 teaspoon baking soda
1 tablespoons lemon juice
3/4 cup apricot preserves
Preheat the oven to 375 degrees. Grease a 9-inch square baking pan. In a medium bowl, beat the margarine until creamy. Stir in the sugar and brown sugar. Add
flour, salt, and baking soda. Stir until mixture is crumbly.
Set aside 1 cup of the crumb mixture; press the remaining mixture into baking pan. Stir lemon juice into apricot preserves. Spread into the pan, leaving a 1/4-inch border around all the edges.
Sprinkle preserves with remaining 1 cup crumb mixture. Bake 35 to 40 minutes until lightly browned.
