1 large yellow onion
1 large can chopped tomatoes
4 slices bacon salt/pepper to taste
1 sm. can tomato sauce
1-2 c. flour (depending on how much gravy you wish)
1 sm. sauce can water to make)
Dice onion in skillet add raw cut bacon (cut bacon in small pieces with kitchen scissors) add about 2 tsp. bacon fat brown until tender add chopped tomatoes and let simmer, reduce heat and remove skillet while adding flour,stiring constantly to prevent lumping.
Add tomato sauce and water. Stir until mixture reaches the consistency of gravy. May add cubed potatoes. Or mixed vegetables makes a wonderful base for tomato stew. You can also add a can of Rotel for a spicier gravy.
