Lemon Frosting

2 cups confectioners' sugar
1/4 cup margarine, softened
2 tablespoons soy milk
juice and grated rind of one lemon

With an electric mixer set at low speed, cream the sugar and margarine. Beat in the soy milk and lemon juice. Stir in the lemon rind. Makes enough to frost one large cake.



Chocolate Buttercream

1 box powdered sugar
1/2 CUP margarine
1/4 CUP shortening
1/2 CUP cocoa
1 TSP vanilla
1/2 CUP evaporated milk

Cream the margarine until fluffy. Gradually add the powdered sugar, beating well after each addition. Add the rest of the ingredients; mix well. Spread on your favorite Cake.
