Boston Baked Beans Mix


2 cups small white pea beans
1/2 teaspoon dried thyme
1 bay leaf
1/4 teaspoon ground ginger
1/2 teaspoon ground pepper
1 1/2 teaspoons salt

Combine all ingredients into medium bowl. Stir until mixture is blended and pack into airtight container. Pack into a baked-bean crock with a jar of molasses and brown bread mix.

Boston Baked Beans

2 strips bacon cut into 2" dice
4 3/4 c. water
3/4 cup chopped onion
1 clove garlic minced
3 tbl. dark molasses
2 tbl. prepared mustard
1 package baked bean mix.

Combine all ingredients into a 3-4 quart bean pot or crockpot. Bring beans to simmer and cook over low heat in slow cooker or in oven in a bean pot at 300. The beans should simmer 10-12 hours. Stir them occasionally to prevent sticking. The beans may be baked ahead of time and reheated.serves 8-10
