2 boneless, skinless chicken breasts
1/4 cup plain bread crumbs
1 egg white
1/4 cup skim milk
1/4 cup tomato sauce
2 tbls part skim mozzarella cheese
Shake of: parsley, pepper, oregano, basil, garlic powder Spray pan and turn heat on stove to medium Beat egg white and milk In separate bowl, mix bread crumbs and spices. Pound chicken breasts to 1/2" thick. Dip chicken in egg/milk mixture and coat with bread crumbs. Put chicken in preheated pan, cover and cook 3 to 4 minutes. Plip and cook an additional 3 to 4 minutes.
Spoon tomato sauce and mozzarella cheese over chicken, cover and cook briefly until cheese melts. YIELD: 2 servings
