Mississippi Mud Pie
- 3 one ounce squares unsweetened chocolate
- 1-1/2 C sifted powdered sugar
- 1/2 C whipping cream
- 1/3 C butter
- 3 tbsp. light corn syrup
- 1 tbsp. vanilla extract
- 1 nine inch graham cracker pie shell
- 1 cup chopped pecans, divided
- 3 cups coffee flavored ice cream, softened and divided
- sweetened whipped cream
In a heavy saucepan, dissolve cornst&ch in water; stir in sweetened milk and egg yolks. Cook and stir until thick and bubbly. Remove from heat, add. butter and vanilla. Cool slightly. Slice 2 bananas; dip in lemon juice and drain. Arrange on bottom of crust. Pour filling over bananas; cover. Chill 4 his. or until set. Spread top with whipped cream. Slice remaining banana; dip in lemon juice, drain and garnish top of pie. Refrigerate leftovers.
