Quick Lemon-Broccoli Rice


1 can (10 1/2 ounces) Condensed Chicken Broth
1 cup small broccoli flowerets
1 small carrot, shredded (about 1/3 cup)
1 1/4 cups uncooked Minute Original Rice
2 teaspoons lemon juice
generous dash pepper

In medium saucepan over high heat, heat broth to a boil. Add broccoli and carrot. Reduce heat to low. Cover and cook 5 minutes or until vegetables are tender. Stir in rice, lemon juice and pepper. Cover and remove from heat. Let stand 5 minutes. Fluff with fork. Serves 4.
