Easy Apple Sauce
3 large apples, pared, cored and sliced
1/4 cup granulated sugar
1 teaspoon pure vanilla extract
1/2 teaspoon grated lemon peel
optional: 1/2 tsp. cinnamon
Place apples in a covered microwave safe container
and cook on high for eight to ten minutes, or until soft,
stirring occasionally. Beat in sugar, vanilla, lemon peel
and cinnamon if using. Serve warm or chill in the
refrigerator.
