Ginger Applesauce
10 medium tart apples
2 2-1/2 inch long cinnamon sticks
1 cup apple juice or cider
1 tsp. grated lemon zest
1/3 cup packed brown sugar
1 1/2 tbsp. fresh grated ginger
1/4 tsp. grated nutmeg
Pare, core and coarsely chop the apples. Place the
apples, cinnamon, apple juice and lemon zest in a
large pan. Simmer covered, stirring occasionally,
over medium low heat until the apples are soft. About
20-25 minutes. Stir in the sugar to taste, ginger and
the nutmeg. Cook until the sugar is dissolved and
the sauce thickens, about 5 minutes. Serve warm
or cold. Remove cinnamon sticks just before serving.
Makes about 6 cups.
