DUMPH KNEPP
(Steam Buttons)
1/2 cup milk
2 tablespoons sugar
1 egg beaten
1/2 teaspoon salt
1-1/2 teaspoons shortening
1-3/4 cups flour
1 tablespoon dry, or 1 package yeast
Heat milk to scalding, (until a skin forms on top) cool to lukewarm. Add yeast and dissolve. Add shortening, salt, sugar, egg and flour. Place in a greased bowl and let rise until double in bulk.
Punch down and divide into fourth and shape into balls.
Place into a greased 10 round cake pan and let rise, about 1 to 1-1/2 hours
Heat a large skillet (12") and pour in about 3/4 to 1 cup water. Bring to a boil and place into skillet on top of a small rack. (I use 2 dinner knives) Let cook on medium heat for 20 minutes. Take skillet off stove and let stand a few minutes before removing lid.
Serve warn with sugar and milk. Can be frozen and then reheated in the microwave. Mother often made this when she baked bread. Of course, we didn't have a freezer or microwave at that time so we ate all of it at one sitting.
