Carrot Cake
3/4 cup veg. oil
2 teasp. soda
3 large eggs
1 teas. salt
2 cups sugar
2 teas. cinnamon
2 cups flour
3 cups grated carrots
2 teas. baking powder
1 cup chopped walnuts
Sift dry ingredients together, mix thoroughly the sugar, oil, and eggs. add carrots and mix. add dry ingredients a little at a time. add nuts. Bake in greased and floured 9 x 13 pan at 325% for 60 to 70 minutes.
Frost with cream cheese frosting
1 8oz. cream cheese
1 stick butter
1 lb. powered sugar
1 cup chopped nuts
