Fresh Apple Bread Fresh Apple Bread

1 CUPS sugar
1 1/2 TBSP sugar
1/2 CUP shortening
2 CUPS plus 1 TBSP all-purpose flour
1 CUP peeled and grated apples
1 1/2 TBSP buttermilk
2 eggs
1 TSP soda
1/2 TSP salt
1/2 TSP vanilla
1/2 TSP cinnamon
1 CUP chopped pecans

Combine sugar and shortening and cream until light and fluffy. Add eggs one at a time; beating well after each addition. Combine 2 cups flour, soda and salt. Add buttermilk and vanilla. Add dry ingredients to the creamed mixture beating well after each addition. Combine pecans with 1 TBSP flour and stir well. Add pecans and apples to the mixture and stir. Spoon batter into greased and floured loaf pan.
Combine: sugar and cinnamon and sprinkle over batter. Bake at 350 degrees for 1 hour.
