Soda Bread

• 2 cups flour, sifted
• 11/2 tsp. baking powder
• 1 cup buttermilk
• 3/4 tsp. salt
• 1/4 tsp. baking soda

Mix dry ingredients. Add buttermilk and stir to make a soft dough. Turn out on a lightly floured board and knead for about 1 minute. Shape the dough into a round loaf about 8 inches in diameter. Put in a greased round pan With a sharp knife cut a cross on top and bake in 350 degree oven for about 40 minutes or until done. Bread is done if it sounds hollow when tapped with the knuckles Cool on its side before cutting. For a soft crust, wrap the loaf in a tea towel and stand on its side to cool.
