Cranberry Bread


2 cups all-purpose flour
1 cup sugar
1 1/2 t baking powder
1/2 t baking soda
1 t. salt
1/4 cup shortening
3/4 orange juice
1 T grated orange rind
1 egg well beaten
1/2 cup chopped pecans or walnuts
2 cups coarsely chopped fresh cranberries

Grease and flour a 9x5 loaf pan, set aside. In a large bowl combine the flour, sugar, baking powder, soda and salt.

Cut in shortening until mixture resembles coarse meal. In a separate bowl combine the Orange juice, rind and egg. Pour all at once into the dry ingredients, mixing with a fork just enough to moisten. Carefully fold in the nuts and cranberries. Spoon into prepared loaf pan, spreading the corner and sides slightly higher than the center.

Bake 350 degrees. 1 hr. or until a wooden pick inserted comes out clean. Cool loaf in pans on a wire rack, 10 min. Remove form pan, cool completely before slicing.
