PINEAPPLE MUFFIN


2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon soda
1/2 teaspoon salt
1/2 cup firmly packed brown sugar
1 egg -- well beaten
1 (8 oz.) carton sour cream
1 (8 oz.) crushed pineapple -- undrained
1/2 cup melted shortening
1/2 cup chopped pecans

Combine first 5 ingredients. Make a well and combine egg, sour cream, pineapple and shortening. Stir in dry ingredients and 1/2 cup pecans. Bake in muffin tins. Bake at 400 degrees for 20 minutes or until brown. Yields 1 1/2 dozen.
