Double Chocolate Banana Muffins


1 and 1/2 cups all purpose flour
3/4 cup Pourable Sugar Twin
1/4 cup unsweetened cocoa
1 tsp. baking powder
1/2 tsp. baking soda
1 and 1/3 cups ( 4 ripe medium ) bananas, mashed
1 egg or equivalent in egg substitute
2 Tbsps. vegetable oil
1/4 cup Land o Lakes no fat sour cream
1/4 cup ( 1 oz. ) chocolate chips

Preheat oven to 375F. Spray 8 muffin cups or line with paper inserts. In a large bowl, combine flour, Sugar Twin, cocoa, baking powder and baking soda..

In a small bowl, combine, bananas, egg, vegetable oil, and sour cream. Add banana mixture to flour mixture. Mix gently to combine. Fold in chocolate chips. Evenly spoon batter into prepared muffin cups. Bake 20-25 minutes or til toothpick tests clean. Place muffin pan on a rack and let set for 5 minutes. Remove muffins from pan and continue cooling on rack.
