BLUEBERRY OATMEAL MUFFINS


1/3 C. plain flour
1 C. oatmeal, uncooked
¼ C. brown sugar
1 T. baking powder
1/2 tsp. salt
1/2 tsp. cinnamon
1 C. skim milk
2 egg whites
3 T. canola oil
1 tsp. vanilla
1 C. blueberrIes
2 T. sugar

Coat 12 muffin tins with cooking spray.
In large bowl, combine flour, oatmeal brown sugar, baking powder, salt and cinnamon; make a well in center.
Add milk, egg whites, oil, and vanilla; stir just until moistened.
Fold in blueberries; fill muffin tins 2/3's full
Sprinkle tops with 2 table-spoons sugar.
Bake at 425* for 20 minutes or until golden brown.
