Puff Pancakes
2 eggs
3/4 cup milk
2 1/3 cups Bisquick baking mix
2 tablespoons sugar
1/4 cup vegetable oil or shortening, melted
Beat eggs in small bowl on high speen until thick and lemon colored, about 5 minutes. Stir in remaining ingredients. Pour scant 1/4 cup batter onto medium-hot ungreased griddle. Cook until pancakes are dry
around edges. Turn; cook other sides until golden brown. About 17 pancakes.
