Decadent Chocolate Chips Cupcakes
1/2 cup softened butter
6 tbsp granulated sugar
6 tbsp brown sugar
1/2 tsp vanilla extract
1 egg
1 cup + 2 tbsp all-purpose flour
1/2 tsp baking soda
1/2 tsp salt
Chocolate Chips Filling
1/2 cup packed brown sugar
1 egg
1/2 tsp vanilla extract
Pinch of salt
8 oz chocolate chips
1/2 cup coarsely chopped choice of nuts
Preheat oven to 375F (190C).
In bowl, cream butter, sugar, brown sugar, vanilla and egg. Set
aside. Mix together flour, baking soda and salt. Stir dry
ingredients into butter mixture gradually. Pour batter in
buttered muffin cups. Bake for 10 minutes.
Remove from oven and top each cupcake with Chocolate Chips
Filling. Return cupcakes to oven and bake for another 12
minutes. Remove from oven and let cool.
Chocolate Chips Filling
In bowl, combine all ingredients with fork. Keep as topping for
favourite desserts.
