Chinese Pork Supper


1 pound ground pork
2 tablespoons corn oil
2 large onions, chopped
1 1/2 cups chopped celery
1 package (1 ounce) brown gravy mix, prepared according to package directions
1 can (10 1/2 ounce) cream of mushroom soup
1/2 cup uncooked rice
1/4 cup soy sauce
1/2 cup hot water
1 can (3 ounces) chow mein noodles
1/2 cup cashew nuts

Brown pork until crumbly; drain fat. Add oil, onion and celery; saute util limp. Combine gravy and soup; add to meat mixture. Combine rice, soy sauce and hot water. Combine meat and rice mixtures; cover and bake n a greased casserole in preheated 350 degrees oven for 30 minutes.
Uncover, top with chow mein noodles and cashews. Return to oven for an additional 30 minutes.

Makes 4 servings.
