Lemon Bars

Crust:
1-3/4 cups flour
3/4 cup unsalted butter
1/3 cup sugar

Filling:
1/2 cup flour
2-1/2 cups sugar
6 large eggs, at room temperature
1 cup lemon juice (preferably freshly squeezed) Pinch lemon zest

Preheat oven to 350 degrees. Grease a 9-inch by 13-inch baking pan.
Combine crust ingredients in a food processor and blend until crumbly.
Press evenly into the bottom of pan. Bake 20 minutes.
Meanwhile, whisk together flour and sugar.
Add eggs, lemon juice, and zest; mix well.
Pour onto crust; bake 20 minutes, until top no longer jiggles.
Allow bars to cool.
Run a knife around the edges of the pan; invert bars onto a cookie sheet, then re-invert onto a cutting board.
