Baked Apples

1/4 c golden raisins
1/4 c chopped walnuts
2 tsp chopped crystallized ginger
1/4 c firmly packed light brown sugar
2 TBSP brandy or apple juice
4 medium apples, cored
4 tsp apricot preserves
1 c water (if doing separately)

In a small bowl, mix together the raisins, walnuts, ginger, brown sugar and brandy or apple juice. Place each apple in the center of a 12" square of double thickness foil. Pack the cavity of each with a generous 2 TBSP of the raisin mixture and top with 1 tsp of the preserves. Gather the foil up around the apples and twist closed. Place the wrapped apples on both sides of the loin and cook the loin as directed. Makes 4 servings
