Country Meat Loaf


1 pound lean ground beef
8 ounces lean ground pork
1/2 cup soft whole wheat bread crumbs
1/2 medium onion -- finely chopped
1/3 cup finely chopped celery
1/4 cup chopped fresh parsley
1/2 teaspoon chopped fresh rosemary leaves or a pinch of dried
1/4 teaspoon fresh thyme leaves or a pinch of dried
1 teaspoon salt
1 large egg
1 8-ounce can tomato sauce
1 teaspoon light brown sugar
1 teaspoon red wine vinegar

Preheat the oven to 350 degrees.
In a large bowl, mix both meats with the bread crumbs, onion, celery, parsley, rosemary, thyme, salt, and egg. In a small bowl, mix the tomato sauce, brown sugar, and vinegar. Add 1/4 cup of the tomato sauce mixture to the meat loaf mixture and mix well.

Lightly pack the meat loaf mixture into an 9 x 5-inch loaf pan; level the top. Place in a hot oven and bake for 40 minutes.

Remove the meat loaf from the oven; spread 1/4 cup of the tomato sauce mixture over the top of the loaf. Return to the oven and bake until done, about 30 minutes longer.

Serving Ideas : Remove the meat loaf to a serving platter and cut into 1/2-inch slices. Serve the remaining tomato sauce mixture on the side. Good with scalloped potatoes.
