Chicken Divan
vegetable cooking spray
1/2 cup light mayonnaise or salad dressing
1/4 cup flour
2 1/2 cups skim milk
1 cup (4 ounce package) shredded reduced-fat sharp
cheddar cheese
1 2 cup package minute or boil in bag rice, cooked and
drained
1 16 ounce package frozen broccoli cuts, thawed and drained
1/2 cup grated parmesan cheese
1 pound roasted chicken breast, cut into 1/4-inch slices
Preheat oven to 375 degrees. In medium saucepan, whisk together salad
dressing and flour over low heat until smooth. Gradually add milk,
stirring constantly over medium heat, until thickened. Add cheddar
cheese; stir until melted. Remove sauce from heat. Coat a 12 x 8-inch
baking dish with cooking spray. Layer rice and broccoli; to with half
the sauce. Sprinkle with half the Parmesan cheese. Top with chicken,
remaining sauce and remaining parmesan cheese. Bake 35 minutes or until
sauce is bubbling
