BAKED CHICKEN


4 slices bread trimmed
1/2 cup mayonnaise
4 chicken breasts, cooked (4 cups dices)
1 cup diced celery
4 eggs
3 cups milk or broth
1 cup grated sharp cheese
1 green pepper
1 red pimento
1 medium onion
1 can cream of mushroom soup

Place 4 slices of trimmed bread in bottom of baking dish. Cover with 1/2 cup mayonnaise. Saute green pepper, pimento and onion in butter. Place chicken, and sauteed mixture over bread. Cover with 4 more slices of bread and 1 Tbsp. mayonnaise. Beat 4 eggs and 3 cups milk or chicken broth and pour over mix-ture. Place in refrigerator 24 hours. Remove from refigerator for 1/2 hour. Bake in 325 oven for 25 minutes. Remove and add 1 can undiluted cream of mushroom soup, 1 cup grated sharp cheese and paprika. Bake at 325 for 2 hours.
