NOODLES WITH FRUIT AND NUTS


1 (l2oz.) pkg. of Reames frozen egg noodles
2 qts. boiling water, salted
3 eggs
1/4 cup brown or white sugar
i/s tsp. nutmeg
1/4 cup butter or chicken fat, melted
1 Tbsp. lemon juice
1 cup or less, seedless white
raisins and/or dried apricots cut in pieces
1/2 cup sliced blanched almonds
2 Tbsp. bread or cornflake crumbs

Add noodles to boiling salted water and cook until soft, about 15 minutes. Drain well; rinse with hot water. In large mixing bowl, beat eggs and sugar with rotary beater until fluffy.
Add the noodles, nutmeg, lemon juice, raisins, almonds and melted fat; mix well and turn into a well-greased 6 cup ring milk or baking dish. Sprinkle with bread crumbs (and drizzle with 1 Tbsp. melted butter, if desired). Bake uncovered in preheated oven at 350 until brownedq about 45-55 minutes. Serve with meat or poultry dished or as a dessert.
