Creamy Coleslaw


3 to 4 C. shredded cabbage
1 C. shredded carrots
1 c. thinly sliced green pepper
1/2 C. mayonnaise or salad dressing
1/4 c lemon juice
1 to 2 tbsp. sugar
1 tbsp. mustard
1 tsp. celery seed
1 tsp. salt

In a large bowl, toss cabbage, carrots and green pepper. In a small bowl, combine the remaining ingredients. Pour over the cabbage mixture and toss to coat. chill for at least 2 to 3 hours. Yield: 6 to 8 servings.

CRACKER DRESSING


1/2 lb. soda crackers,broken in pieces
5 hard boiled eggs, diced
1 diced green pepper
4 stalks of celery, diced
1 large diced onion

Cook one chicken off bones. Thicken chicken with broth with a little corn-starch. Not too thick. Pour over cracker mixture. Season to taste and serve warm.
VARIATION: Toss into 2 cups torn romaine lettuce.
