Rio Grande Dressing

10 oz Can RO*TEL Diced Tomatoes and Green Chilies
1/2 c Olive oil
1/4 c Red wine vinegar
2 ts Guldens Spicy Brown Mustard
1 ts Garlic; mince
1 ts Fresh ground black pepper
1 ts Paprika
1 ts Worcestershire sauce
1/2 ts Salt

Combine all ingredients in a blender. Pulse on/off for 30 seconds or until thoroughly blended. Dressing is best when used the same day.



Cucumber Salad


- This serves 6 but could be divide by 3 to serve 2

3 large cucumbers, peeled, thinly sliced
1 cup white vinegar
3/4 cup sugar
1 teaspoon salt
dash red hot pepper
dash dried parsley
dash black pepper
dash basil

Combine all ingredients except cucumbers and heat until sugar melts. Let cool slightly. Pour over cucumbers.
Store in an airtight container. Keeps well for several days.
