Crazy Tuna Salad

1 Ig. can chunk white tuna packed in water
I can unsweetened pineapple chunks
1 to 2 C. coarse chopped celery
1 can water chestnuts, drained
3/4 c. non fat mayonnaise
1/4 C Dijon mustard

Mix mustard and mayonnaise. Toss other ingredients together and mix with the mayonnaise/mustard mixture. Refrigerate; serve over lettuce leaves.

YUM-YUM SALAD

1/2 cup sugar
1/3 cup pineapple Juice
1/3 cup lemon juice
2 eggs
1 pkg. cream cheese
1 cup marshmallows
1 can sliced peaches
1 can mandarin oranges
1 cup green grapes
1 can crushed pineapple
1/2 pt. whipped cream

Stir sugar, juices and eggs over heat until thickened. Cool. Drain all fruit. Mix cream cheese and crushed pineapple. Mix all together and chill.
VARIATION: Toss in 2 cups torn romaine lettuce.
