HOT CHICKEN SALAD


2 c. cooked chicken, diced
½ tap. salt
½ c. slIvered almonds
2 c. celery, diced
1/2 tsp. Accent
2 T. lemon juice
1/2 tsp. grated onion
1 c. mayonnaise
1/2 c. grated cheddar cheese
1 c. potato chips, crushed

Mix all ingredients, except cheese and potato chips. Pour in 11x13-inch baking dish. Top with cheese and potato chips. Bake at 350* for 20 minutes. Variation: Add a can of peas or substitute turkey for chicken, or substitute cashews for almonds.

Chicken Salad


4 cups bite-size pieces cooked chicken
2 teaspoons grated onion or chopped scallions -- optional
1 cup sliced celery
2/3 cup mayonnaise
1/4 cup heavy cream
2 tablespoons vinegar
1/8 teaspoon freshly ground pepper
Salt -- to taste
1 head Bibb lettuce -- washed and dried

Put chicken in a bowl and add the onion or scallions (if you like) and celery.
Combine the mayonnaise, cream, and vinegar and blend well.
Add pepper and salt, and toss with chicken, until well mixed.
Make a bed of the lettuce leaves and spoon the chicken salad over.

VARIATIONS AND ADDITIONS:
* Sprinkle 1 cup chopped almonds over salad

* Instead of the celery, add 1 cup seedless grapes to the chicken mixture.

* Add 2 teaspoons curry powder to the mayonnaise.

* Omit the celery and add 1/2 cup peeled, seeded, diced cucumber and 1/2 cup pineapple bits.

* Add 1 cup diced, unpeeled red apple and 1/2 cup chopped walnuts.
