Chicken Salad


2 cans white chunk chicken packed in water, drained
1 c. chopped celery
1 C. chopped onion
1 can sliced water chestnuts, drained
1 can whole kernel corn, drained
salt and pepper, to taste
1/8 tsp sweet basil leaves
1 small jar fat free Miracle whip
1/2 c. mustard

Mix mustard, Miracle whip, salt, pepper and basil leaves. Using fork, mix with remaining ingredients in a very large bowl. Cover bowl and refrigerate for at least 2 hours Let the flavors mix together. Serve over Romaine let-tuce leaves

CREAMY 0RANAGE AND PINEAPPLE SALAD


1 can (821oz.) crushed pineapple
1 cup whipped cream
1 pkg. (3oz.) orange flavored gelatin
1 grated carrot, about 1 cup
1 pkg. (3oz.) cream cheese

Drain pineapple. Reserve juice. Add water to make 1 cup. Heat to a boil. Add boiling liquid to cream cheese and gelatin. Beat with rotary beater just until smooth. Cool, stirring occassionally. Whip cream. Fold the cream and grated carrot and pineapple into cooled gelatin. Pour into 8x8'~ dish. Chill until firm. Dream whip may be used in place of ream.
VARIATION: Toss in 2 cups torn romaine lettuce.
