Polynesian Sweet And Sour Sauce


1/2 cup water
1 cup white vinegar
1 cup granulated sugar
2 teaspoons red food coloring -- optional
2 tablespoons cornstarch
2 tablespoons water
1/2 cup diced green pepper
1/2 cup diced onion
1/2 cup diced pineapple

In a saucepan, combine 1/2 cup water, the vinegar, sugar and food coloring if desired. Bring to a boil. Dissolve cornstarch in 2 tablespoons water and stir into vinegar mixture, using a whisk. Cook and stir 5 minutes. Add green pepper, onion and pineapple. Serve on shrimp, chicken or pork. Refrigerate leftovers.
