German Potato Salad


Toss in Bowl, Then Broil:
24 red potatoes, skin on, sliced 1/2" thick
3 T. olive oil
1 T. kosher salt
2 t. black pepper

Toss Roasted Potatoes with:
2 T. cider vinegar

For The Hot Dressing -- Saute:
1/2 lb. bacon, diced

Saute in 1/4 cup Bacon Fat:
1 cup onions, diced

Add and Stir Continuously:
1 T. flour

Stir in and Cook 2 minutes:
1/2 cup cider vinegar
1/4 cup beef broth
2 T. light brown sugar
Add to Dressing:
Cooked bacon

Toss with Roasted Potatoes:
1 recipe Hot Dressing
1/3 cup green onions (green part only), chopped
Salt and pepper to taste
